The turmeric and ginger make this is a great anti-anti-inflamatory post workout meal, lunch or healthy snack. It's easy and can be modified using any vegetables you have in the pantry.
Before switching over to eating all things gluten-free, sweet potato pancakes were one of my kids favorites. After a few sad attempts at duplicating their favorite recipe, my biggest failure crumbling like quicksand, these turned out beautifully! They’re moist, fluffy and have delicious chunks of sweet potato. Even my picky son who protests our new gluten free diet asked for seconds.
Despite my best intentions to transition my family to a vegetarian lifestyle, most them love meat! So, when I do cook with it, I try to cook with as many vegetables and grains to make it stretch. Not only does this pump up the meals health factor, it saves money.
