Wild Rice Rotisserie Soup

Despite my best intentions to transition my family to a vegetarian lifestyle, most them love meat! So, when I do cook with it, I try to cook with as many vegetables and grains to make it stretch. Not only does this pump up the meals health factor, it saves money.

Ingredients

1 red Onion, diced

3 celery Stalks, diced

3 carrots, sliced

2-3 cups leftover rotisserie chicken, cut into pieces

1 ½ cup wild rice

5 cups of water

2 tablespoons dried oregano

1 tablespoon savory

2 tablespoons ground sage

1-2 teaspoons salt

2 teaspoons pepper

1 tablespoon olive oil for sautéing vegetables

1 cup frozen spinach, fresh broccoli or your favorite green veggie (optional)

Directions

Rinse wild rice until water runs clear.

Sauté onion, celery and carrots in a tablespoon of coconut oil in a large pot over medium to high heat for 3-4 minutes.

Add rice, chicken, water and remaining ingredients to the pot and bring to a boil.

Reduce to simmer, cover and cook for 40 minutes

Uncover and enjoy!
