Super Moist Gluten Free Banana Bread Or Muffins

This is a light and moist banana bread that just happens to be gluten free. After 3 years of searching for the perfect banana muffins, this is our family's favorite.


¾ cup canned coconut milk (cream)

3 medium ripe bananas, mashed

3 eggs

½ cup coconut oil, melted

¼ cup maple syrup

1/8 teaspoon stevia

½ teaspoon cinnamon

¼ teaspoon salt

½ cup mini chocolate chips

2 cups gluten free flour

1 teaspoon baking powder

1 teaspoon baking soda


Preheat oven to 350

Grease 9x13 pan with coconut oil

In a large bowl, add canned coconut milk, mashed bananas, eggs, coconut oil, maple syrup, cinnamon, salt and stevia. Combine with an electric hand beater on medium for 2 minutes. Add chocolate chips and combine with large spoon or rubber spatchula.

In a small bowl, combine two cups of gluten free flour with baking powder and baking soda. Then add dry mixture to wet and combine just until all ingredients are combined (do not overmix).

Pour into pan and cook for 30-40 minutes.
