Kale Amino Salad

I love kale and wanted a versatile salad base that my 4 kids could customize to their own liking. This salad is a hit. Pick from my topping ideas or create your own version of this Kale Amino Salad.

Ingredients

1 bunch kale

1 onion, diced

2 medium carrots, grated

2-3 tablespoon liquid aminos

2 tablespoon olive oil

TOPPING IDEAS (OPTIONAL)

Hemp Seeds

Goji Berries

Currants or Raisins

Pecans, walnuts or your favorite nuts

Sunflower, sesame or pumpkin seeds

Oranges

Your favorite beans

Quinoa

Directions

Wash and dry kale. Then cut into 2-3 inch strips and place in bowl with onions and carrots.

Add liquid aminos and olive oil to a small bowl and mix well.

Pour amino mixture over kale and toss with hands until fully coated.

Let rest for a couple minutes and mix again.

Top with your favorite superfood and/or protein and Eat immediately. This will keep in the refrigerator for up to 2 days
