EmailTweet Carrots and Oats Stuffed Baked Apples Breakfast, Dessert American Oven September 25, 2015 0.0 0 Prep: 5 mins Cook: 1 hr 5 mins 5 mins 1 hr 5 mins 1 hr 10 mins Ingredients 5 medium gala apples, fresh 1 ½ cup rolled oats (gluten free if desired) 4 tablespoons coconut oil, melted 1 ½ tablespoons coconut oil or ghee (not melted) 1/4 cup maple syrup ¼ cup date sugar (or 1 teaspoon stevia) 1 tablespoon cinnamon 1 medium carrot, shaved (1/2 cup) 1/3 cup raisins pinch of salt Directions 1. Preheat the oven to 375 degrees. 2. Line a 8x11-baking dish with parchment paper. 3. Wash apples and cut in half, horizontally. Remove middle cores and place in baking dish. 4. Combine all ingredients (except un-melted coconut oil/ghee) in a bowl and using a spoon, scoop oat mixture into apples. 5. Divide the remaining coconut oil/ghee and place on tops of the apples.
