Warm skillet to medium high heat and add coconut oil. Place sliced plantains into skillet and cook 1-2 minutes on each side.
Remove and place on plate. Be careful not drain the super healthy delicious coconut oil from the plantains on a napkin – eat it - It’s good for your body!
Place shaved coconut and sunflower seeds on each plantain and sprinkle with Cayenne pepper. Eat and enjoy!
