Healthy Fast Food Breakfast Egg & Potato Cups

Ingredients

3 eggs

½ cup of your favorite cooked grass-fed breakfast meat, optional

2 medium potatoes, diced

4 cups of spinach

½ red onion, diced

½ green pepper, diced

2 tablespoons coconut oil

1 teaspoon fresh dill

salt

pepper

2 glass cups

Directions

Sauté onions and green peppers in one tablespoon of coconut oil in a skillet over medium high heat for 2-4 minutes or until soft. Then add 3 cups of spinach to skillet and cook for another minute, just until spinach is wilted. Sprinkle with a little salt and remove from heat. Place spinach mixture in a small bowl.

Sauté potatoes in skillet for 8 minutes (or until tender) in coconut oil over medium high heat. Sprinkle with salt and pepper, remove from heat and place in a separate bowl.

Crack and scramble eggs in a small bowl. Using one tablespoon of oil, cook scrambled eggs in a pan and remove from heat.

Assemble your Cups: Layer the bottom with fresh spinach, then cooked potatoes, meat (optional), sautéed spinach and onion mixture and top with scrambled egg. Top with fresh dill.
